I love hummus, but making it from scratch can take some time. If you want a delicious healthy snack this zucchini hummus is quick to make and pairs great with paleo crackers or veggies. The best part is that it you will hardly taste the difference.
Zucchini is a very versatile vegetable, it is rich in fibre benefiting digestion and helping to balance blood sugar levels. Zucchinis are also a great source of vitamin C, vitamin B6 and magnesium. They are also great for absorbing flavours, the combination of the tahini, herbs and spices in this hummus recipe transform the zucchini into a one of a kind dip or spread.
This makes quite a big batch, which can be stored in the fridge for about a week, or can be frozen for a month.
This zucchini hummus will be your next favourite snack food. If you try out this recipe let us know! Leave a comment, rate it and tag a photo #holistickenko on instagram! Have a wonderfully positive day everyone!
